They are a husband and wife team, Declan and Deirdre McCarthy.  They set up the business 3 years ago where they attend farmers market selling Organic Beef, Lamb, Pork and Chicken.    

Declan buys Beef and Lamb from Registered Organic Farmers in the North West.  Over the few years Declan has got to know the farmers on a personal basis.  This gives farmers the confidence in finishing off Cattle, knowing they will have a market for their Beef.  This is also true for lamb farmers.  Declan's emphasis on top quality stock is the foundations of his business.  

Farmers know that good farming techniques and the ability to finish off stock to a good standard make for a very saleable product.  Declan and Deirdre endeavour to bring to the customer only the very best and this is the reason for the ongoing growth of their business that keeps all links in the food chain solid, the farmer, the retailer and then to you, the customer.


The ability to bring fresh meat for sale at a market requires more than just a meat cabinet so Declan and Deirdre spend a lot of time and indeed money in designing their mobile refrigerated Butchering Vehicles.  They have two state of the art butchers shops on wheels.  With full approval from the HSE, they are at the forefront of hygiene. The ability to display an excellent range of meat is a very important factor as they carry Beef, Lamb, Pork and Chickens.

They are also members of IOGFA, (Irish Organic Growers and Farmers Assoc), one of the governing bodies that regulates Organic retailers and they have the backing of DAFF. (Dept of Agriculture, Fisheries and Food).

With the alarming amount of allergies on the rise in Ireland, many mothers are looking for additive and preservative free produce for their young children.  All our sausages are made with 85% meat content [Pork, rusk, water, salt & pepper] and are preservative free.  Declan recognises these problems and can make PURE Pork sausages, [no rusk] suitable for anyone with a wheat intolerance.  Prior ordering is required but Declan aims to meet everyone’s needs.

Declan also makes Beef sausages and Lamb sausages.

Deirdre provides menu cards to accompany all cuts of meat and useful hits and tips on cooking times.
